HUNTER’S CHICKEN






HUNTER’S CHICKEN








A tender chicken dish covered with homemade barbecue sauce without syn and melted cheese!

Ingredients
  • 500 g passata
  • 2 tsp smoked paprika
  • 1 tsp balsamic vinegar
  • 2 cloves garlic minced
  • 4 chicken breasts all skin and fat removed
  • cooking oil spray
  • 1/2 tsp ground ginger
  • 8 bacon medallions all fat removed
  • 80 g reduced fat mature cheddar finely grated *Half of each person's Healthy Extra A

Instructions

First, Preheat the oven on the gas mark 6 or 200 degrees.

Then, Place two slices of bacon on each chicken breast, place in a separate roasting pan or pie plates, cover with foil and bake for 30 minutes.

Meanwhile, sauté onions and garlic in a saucepan until tender.

Add balsamic vinegar, paprika, ginger and passata, then cook over medium heat for 8 minutes, stirring occasionally.

Take out the chicken, remove the foil and pour over the tomato sauce and sprinkle over the cheese evenly spread over each chicken breast.

Return to oven for another 15 minutes, uncovered, until cheese is bubbling. Happy Cooking Time.
