Honey Applesauce Cake







Honey Applesauce Cake








Honey and applesauce make this cake fluffy and delicious. It's also an ideal bun for gift and care packages!

INGREDIENTS
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Baking Soda
  • 1 Cup Honey
  • 2 Cups Light or Whole Grain Spelt Flour
  • 1/2 Teaspoon Salt
  • 1 Cup Unsweetened Applesauce
  • 3/4 Cup Sliced Almonds
  • 1 Large Egg At Room Temperature
  • 1/1 Cup Golden Raisins
  • 2 Cup Unsalted Butter, Softened
  • 1 1/2 Teaspoons Ground Cinnamon

INSTRUCTIONS

First, Preheat the oven to 350 degrees F. Grease and lightly flour a 9 inch spring mold.

Then, Cream the butter in a large bowl and gradually stir in the honey until light and fluffy.

Add the egg and vanilla extract and mix well.

Combine the rest of the dry ingredients in another bowl.

Add the flour mixture and applesauce alternately to the cream mixture, starting and ending with the flour mixture.

Stir in the raisins.

Pour the dough into the prepared pan.

Sprinkle the almonds on top of the cake.

Bake for 35 to 40 minutes or until a wooden spade inserted near the center comes out clean.

Cool 10 minutes, then remove the sides.

Allow the cake to cool to room temperature.
