Chewy Oatmeal Cookies








Chewy Oatmeal Cookies







A delicious variant of the classic oatmeal cookie! These oatmeal and coconut cookies are so sweet, chewy and tasty that you can not eat one!

Ingredients
  • 1 large egg
  • 1 tbsp honey
  • 1/2 cup white sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 cup unsalted butter , softened
  • 1/2 cup brown sugar , packed
  • 1/2 cup large flake oats
  • 1 cup quick oats

Instructions

First, Preheat the oven to 350F. Line baking sheets with parchment paper or silicone baking mats.

Then, In large bowl, beat butter and sugars until fluffy.

Stir in egg, vanilla extract and honey. Scrape the sides of the bowl if necessary.

With the mixer at low speed, gently stir in the flour, cinnamon, baking soda and salt.

Add quick oats and oats with large flakes.

Form balls of 1 to 1.5 tablespoon and place them 2 inches apart on the lined cookie sheets.

Bake for 8 to 10 minutes, or until chops look set. Eventually, sprinkle the tops with coarse salt.
