GRILLED GREEK CHICKEN
This easy
chicken marinade infuses a chicken of any cut with the classic Greek flavors of
lemon, garlic and oregano, as well as Greek yogurt for a more tender bite.
INGREDIENTS
- 1/4 cup olive oil
- 4 medium chicken breasts, pounded to 1/2 inch thickness
- 1-1/2 tablespoons minced fresh rosemary leaves
- 1 tablespoon minced fresh thyme leaves
- juice from 2 large lemons
- a generous pinch of both salt and pepper
- 1-1/2 tablespoons minced fresh oregano leaves
- 3 large cloves of garlic, grated or squeezed through a garlic press
INSTRUCTIONS
First, Add
fresh herbs, garlic, olive oil, lemon juice, salt and pepper to a large,
shallow dish and whisk to mix.
Then, Use
tongs to mix the chicken breasts in the marinade. Cover with plastic wrap and
let stand on the counter for 1 hour.
if you
marinate for 2 hours, refrigerate for 1½ hours and take out of the refrigerator
half an hour before cooking.
Preheat
grill on medium-high heat. Grill chicken about 4 to 6 minutes per side. Each
grill is different, so watch and spill it when good marks are forming and
remove when the chicken is completely cooked.
Serve as is
or in thin slices to coat a salad. Happy Cooking Time.
