Crustless Broccoli Quiche
Do you like
quiches but not all empty calories? Try this cheddar-free quiche with broccoli.
It's a super simple dinner idea!
INGREDIENTS
- 8 large eggs
- 1/4 teaspoon black pepper
- 1 teaspoon coarse kosher salt (not fine salt)
- 1 teaspoon garlic powder
- 1 cup shredded sharp cheddar cheese (4 oz)
- 1/2 cup sour cream (or full-fat Greek yogurt)
- 1 tablespoon butter for pan
- 1 (16 oz package) frozen chopped broccoli
- 1/4 cup chopped scallions, white and green parts
INSTRUCTIONS
First, Preheat
the oven to 400 degrees F. Butter generously a 9-inch pie dish.
Then, Place
the broccoli in a large microwaveable bowl. Add 1/4 cup of water. Cover and
microwave at full power for 6 minutes, stirring after the first 3 minutes.
Drain well.
In a large
bowl, whisk together eggs, sour cream, kosher salt, black pepper and garlic powder.
Stir in broccoli, green onions and cheese.
Transfer the
mixture to the prepared pie dish. Cook until the knife is golden brown and a
knife inserted in the center comes out clean, about 30 minutes.
Let the
quiche cool and put in the pan on a rack about 15 minutes before slicing into 8
triangles and serving. Happy Cooking Time.
