Queso Chicken
Queso
Chicken- Spicy Southwest Spiced Chicken with chopped tomatoes, green peppers,
Queso sauce, topped with Cheddar (or Monterey Jack) cheese.
Ingredients
- 2 teaspoons taco seasoning
- 1 cup queso 12 ounces
- salt and pepper
- 4 boneless chicken breast
- 1 cup Buttermilk
- 10 ounces Ro-Tel tomatoes and chilies
- 1 cup pepper jack and cheddar cheese shredded
Instructions
First, Place
the chicken in the ziplock bag with buttermilk and let stand overnight or at
least 30 minutes. Drain and mop.
Then, Preheat
the oven to 375ยบ.
Sprinkle the
season's chicken with tacos, salt and pepper. Place in a glass baking dish.
Drain the
tomatoes and peppers and place half on the chicken, cover with queso and place
the remaining tomatoes on top. Cover with the grated cheese mixture.
Bake for
25-30 minutes, until the thermometer reads 155 °. They will continue to cook
once out of the oven. Happy Cooking Time.
