Chocolate Zucchini Bread









This chocolate zucchini bread will remind you of your favorite chocolate cake!

Ingredients
  • 1/4 teaspoon salt
  • 1/3 cup cocoa powder
  • 1 teaspoon baking soda
  • 2 large eggs
  • 1 1/4 cup all-purpose flour
  • 3/4 cup brown sugar
  • 1 cup chocolate chips
  • 1/2 cup unsalted butter , melted
  • 2 teaspoons vanilla extract
  • 1 1/2 cups grated zucchini*

Instructions

First, Preheat the oven to 350F. Line the bottom of an 8 1/2 x 4 1/2 bread pan with parchment paper, then grease and flour the sides.

Then, Gently wipe the grated zucchini with a paper towel to remove excess water.

In a medium bowl, whisk together flour, cocoa, baking soda and salt.

In a large bowl, whisk together the melted butter, sugar, eggs and vanilla extract until no more pieces of sugar.

Gently stir the flour mixture into the oil mixture.

Once almost combined, incorporate the grated zucchini.

Add the chocolate chips.

Pour the batter into the prepared baking pan and bake for 45 to 55 minutes until the top is firm to the touch and an inserted toothpick comes out clean (with the exception of the melted chocolate chips).

Cool completely before slicing. Happy Cooking Time.
