Asian Chicken Noodle Soup









A light and tasty chicken noodle soup with Asian flavors and some spice!

Ingredients
  • 5 cups water
  • 1.5 teaspoon salt
  • 1.5 teaspoon Chinese Five Spice Powder
  • 3 pounds boneless skinless chicken thighs
  • 1.5 teaspoon fresh cracked black pepper
  • 1 pound Bok Choy
  • 1/2 tsp red pepper flake
  • 1 Tablespoon fresh minced garlic
  • 1 pound Portobello mushrooms
  • 1 Tablespoon Extra Virgin Olive Oil
  • 2.5 Tablespoons minced fresh ginger
  • 5 cups chicken broth
  • 2 Tablespoons soy sauce, (Make sure it's a gluten free brand)
  • 1 6oz. package of Mei Fun Noodles
  • Green Onions, optional (for garnish)

Instructions

First, In a large glass dish, marinate the chicken legs with extra virgin olive oil, Chinese five-spice powder, salt, black pepper and red pepper flakes. less 24 hours.

Then, Once the chicken is marinated, heat a saucepan with 2 tbsp. Extra virgin olive oil on medium-high heat.

Grasp the chicken legs in small amounts for about 5 minutes. (Only grab the chicken, you do not want to cook it completely at this stage).

Remove the pan-fried chicken from the heat and set aside on a plate to cool.

Keep the oil and chicken juice in the pan and reduce the heat to medium.

Add ginger and garlic, cook for 1-2 minutes.

Add the mushrooms and stir well.

Add the soy sauce, chicken broth and water. After adding the liquid, cut the chicken into small pieces and add it to the liquid.

Reduce the heat to medium-low and cook for about 20 minutes.

While the soup is cooking, cut the Bok Choy by removing the base and dicing all the remaining green leaves. (You want your Bok Choy to cut in chunks). Dip the Bok Choy in cold water to remove all the dirt, about 20 minutes.

Once 20 minutes have passed, drain the Bok Choy, rinse it once more, then add it to the soup to let it cook.

Prepare the Mei Fun by soaking it in hot water for 10 minutes, which is the perfect time for the Bok Choy to finish cooking in your soup.

When the Mei Fun is finished, drain the Mei Fun and add it to the soup.

Garnish with chopped green onions. Happy Cooking Time.
