Almond Flour Keto Biscuits
Keto biscuits,
made with almond flour, are wonderfully tender and moist. Try them with sweet
butter - they are wonderful!
Ingredients
- 2 large eggs
- 1 teaspoon salt
- 5 slices bacon
- 1/2 cup heavy whipping cream
- 2 tablespoons butter, diced into tiny 1/3-inch pieces
- 2 cups (8 oz wt.) blanched almond flour
- 1 1/2 cups (5 oz wt.) shredded cheddar cheese
Instructions
First, Cook
the bacon slices on a skillet over medium heat until crisp, 5 to 10 minutes,
turning occasionally. Drain the bacon on a paper towel. Once cooled, crumble it
into small pieces.
Then, Place
a rack in the lower half of the oven and preheat to 375 F.
In large bowl,
add almond flour and salt, stirring until well blended.
Add all
remaining ingredients except bacon to the bowl. Stir for one minute until the
dough is well mixed, with the almond flour completely incorporated.
Add the
crumbled bacon to the bowl while mixing.
Spread the
dough evenly over 8 layers on a baking sheet lined with parchment paper (or a
non-stick surface similar to a baking mat to allow the cookies to slip right
after cooking), spaced about 1 to 2 inches apart.
Bake at 375
F until the cookies are browned and crisp on the outside, 25 to 30 minutes.
Since the ovens vary, start by checking if they have finished at 20 minutes.
Let them cool for 10 minutes before serving.
For
leftovers, keep the cookies in a covered container in the refrigerator for a
few days. To warm, place cookies in a nonstick skillet over medium-low heat
until hot, turning occasionally to prevent browning. No oil needed.
Avoid
heating the microwave as it makes the biscuits soggy. Happy Cooking Time.
