Parmesan Crusted Chicken
Crispy
chicken with parmesan cheese! Under this crunchy golden crust is an incredibly
tender and juicy chicken breast.
Ingredients
- 1/2 tsp Salt
- 1 Egg
- 1 tsp minced Garlic
- 4 tbsp Butter
- 1 tbsp Water
- 2 tbsp Olive Oil
- 1/2 tsp Black Pepper
- 2 cup Shredded Parmesan Cheese
- 2 lb Boneless Skinless Chicken Breast
Instructions
First, Cut
each breast in half and crush about 1/2 inch thick.
Then, Beat
the egg and water in a shallow bowl until the mixture is even.
Add garlic,
salt and pepper and whisk to mix.
Place
Parmesan cheese in another shallow bowl.
Dip each
piece of chicken into the egg mixture, taking care to coat.
Allow the
excess egg to drain.
Place in the
parmesan cheese. Sprinkle more parmesan on top. Press gently, then turn and
repeat on the other side. Shake the excess. Repeat with the rest of the
chicken.
Place the
butter and oil in a large skillet over high heat.
Place the
chicken and do not move it until the edges are golden (so that the cheese
sticks to the chicken, about 3 minutes).
Press
lightly with a spatula, then turn around and do not move until golden brown.
Press
lightly with a spatula and remove to a serving plate.
