CREAMY CAULIFLOWER SOUP







Creamy cauliflower soup is the perfect comfort food for cold days. This easy vegetable soup is packed with flavor and nutrition!

INGREDIENTS

  • 2 cups of milk
  • 1 white onion, diced
  • 1 large head of cauliflower, cut into small florets
  • 4 garlic cloves, chopped
  • 3 carrots, diced
  • 1 teaspoon of dried oregano
  • 3 stalks of celery, sliced
  • 2 tablespoons of salted butter
  • 1 tablespoon of extra virgin olive oil
  • 1 teaspoon of dried thyme
  • 2 tablespoons of cornstarch
  • 2 cups of vegetable broth
  • Salt and pepper to taste

INSTRUCTIONS

First, heat butter and olive oil in a large saucepan over medium-high heat. Add the cauliflower, onions, celery and carrots. Cook, stirring occasionally, 10 to 12 minutes, until the vegetables begin to soften.

Then, add garlic and sauté 1 minute more. Stir in thyme, oregano and cornstarch and cook for 1 minute.

Pour in the vegetable broth and milk. Stir constantly until the mixture comes to a boil.

Reduce the heat to low and simmer, 3 to 5 minutes, until the soup thickens. Season with salt and pepper to taste. Serve hot.
