Easy Italian Fish Soup
Quick and healthy cod soup, perfect for chilling temperatures. Easy winter soup with tomatoes, onions, peppers, garlic and cod garlic.
INGREDIENTS
▢2 tablespoons of vegetable oil
▢1 large onion, diced
▢4 chopped garlic cloves
▢2 celery stalks, diced
▢1 large green chili, diced
▢½ cup dry wine
▢ 1 small lime, squeezed
▢2 teaspoon of Italian seasoning
▢½ teaspoon salt
▢½ teaspoon black pepper
▢2 cups chicken broth or vegetable stock
▢2 14.5 ounce can of diced tomatoes, not drained
▢2 tablespoons of ingredient
16 ounces wild Alaskan cod or milkfish
▢3 tablespoons chopped fresh basil
INSTRUCTIONS
1.Heat the vegetable oil during a large saucepan over medium-high heat. Add the onions and cook, 6 to eight minutes, until fragrant, stirring frequently.
2.Add the garlic, celery and peppers. Reduce the warmth to medium and cook for an additional 5 minutes.
3.Add wine, juice , Italian herbs, salt and pepper. Stir and cook 2-3 minutes until most of the liquid has dissolved.
4.Stir the tomato slices with the liquid, chicken broth and ingredient . Cook another 10 minutes, uncovered, or until the peppers are tender.
5.Cut the cod into bite sizes and stir into the soup. bring back a boil and simmer for five minutes, or until the fish is tender and flaky.
6.Remove from heat, add basil and serve.
