Spicy Tuna Crispy Rice







Spicy Tuna over Crispy Rice is a trendy food that's here to stay. Basic sushi rolls can get so boring, and the crispy texture of the rice combines perfectly with creamy but slightly spicy tuna.

Ingredients

Sushi Rice

  • 1 tablespoon of sugar
  • 1 ½ cup of water
  • 2 teaspoons of sesame oil
  • 1 teaspoon of kosher salt
  • 1 cup of sushi or short grain rice
  • 3 tablespoons of rice vinegar
  • avocado oil or any cooking oil

Spicy tuna

  • ½ lemon juice
  • 2-3 tablespoons soy sauce or coconut aminos
  • 1 teaspoon of sesame oil
  • sliced jalapeno peppers
  • ¼ cup basic mayonnaise or Japanese mayonnaise
  • 1 lb sushi-grade ahi tuna
  • 2-4 tablespoons sriracha sauce (more for taste)

Instructions

Sushi Rice

First, wash the rice 3-4 times or the water is clear.

Then, rice cooker: Add rice and water to the rice cooker and let the rice cook according to the rice cooker setting.

Instant Pot: Add rice and water to the insert, close the lid, seal it, and cook under the rice setting for 12 minutes under lower pressure. Let it release naturally for 10 minutes.

Stovetop: Add the rice and water to the pot, cover and bring to a boil over medium-high heat. Once boiling, boil for 10 minutes, then lower the heat and cook for another 5 minutes. Turn off the heat and let the rice sit for an additional 5 minutes with the lid still open.

When the rice is cooked, gently fluff the rice, then season with rice vinegar, sugar, sesame oil and kosher salt.

Let the rice cool to room temperature. Once cooled, take about 1 to 2 tablespoons of the rice and form * a rectangle or any desired shape. Continue to do this until the rice is used up.

Preheat a large skillet over medium heat with avocado oil or cooking fat with enough oil covering the bottom of the pan and its height is about ¼ inch.

Gently add the shaped sushi rice and cook 3-4 minutes per side or until golden brown. Do not overload the pan as the rice will stick to each other.

Air fryer method: Brush both sides of the shaped sushi rice with oil, place it in the air fryer and cook for 15 minutes at 400F, flipping halfway through cooking.

Place on a paper towel lined to drain, then top with the spicy tuna, jalapeno slices and additional sriracha sauce. Best served hot.

Spicy tuna

Cut the tuna into very small pieces.

Once the tuna is diced, place it in a bowl and add the mayonnaise, sriracha, soy sauce, sesame oil and lemon juice. Mix, taste and adjust the seasoning to your liking. Happy Cooking Time.

Recipe Notes

* Wet your hands a little before shaping the rice. This will help prevent the rice from sticking to your hand.
