Olivier Potato Salad
Olivier Potato Salad is a classic, homemade, Russian potato salad recipe that is easy to prepare. Each bite is a mix of different ingredients, all cut into bite-size pieces to deliver that rich explosion of flavor.
INGREDIENTS
- 6 eggs, cooked and cubed
- 3 dill pickles, cubed
- 1 cup of frozen fresh peas
- 1 cup of mayonnaise
- 3 carrots, cooked and cubed
- 1 sweet onion, cubed
- 3/4 lb meat, cubed
- 3 potatoes, cooked and cut into cubes
- 1/2 English cucumber (2 small teaspoons), cubed
- dill to taste
- salt and pepper to taste
- 1/2 teaspoon of sugar, optional
INSTRUCTIONS
First, in a large saucepan, add the potatoes and carrots. Cover completely with water. Bring to a boil and cook for about 20-25 minutes or until a knife pierces easily. (Do not overcook. Remove carrots and potatoes from water, let cool).
Then, in a small saucepan, add the eggs, cover the watered eggs and bring to a boil. Cook the eggs 8 to 10 minutes.
Cube all the ingredients.
Combine everything, mix. Add mayonnaise to taste. You may need a little more than a cup, depending on the size of your ingredients.
Season with salt, pepper and sugar. Add fresh dill, mix.
