 Mexican Chicken and Rice



If you're keen on Mexican food like i'm , be impressed by this delicious spicy Mexican chicken and rice


INGREDIENT

1 cup (180g) long-grain rice

200 g / 7 ounce canned kidney beans

fresh cilantro

Raw pigeon breast (approx. 400g), halved lengthwise (skin and fat looks removed) otherwise you can use chicken thighs

50g / 1.76oz mozzarella (HEa), grated

30g / 1oz cheddar (HEa) cheese, grated

spray oil

salt and pepper to season

for spicy tomato sauce:

240 ml (1 cup) passata

180 ml (3/4 cup) water

2 teaspoons flavorer

1 teaspoon cumin

1 small onion, finely chopped

2 cloves of garlic, puree

1 tablespoon of apple vinegar

1 teaspoon paprika

1 tablespoon syrup (2 syns)

¼ teaspoon of cayenne pepper


INSTRUCTIONS

6.Add the recent spaghetti sauce from the skillet and cook for a couple of minutes.

7.Mix the rice with kidney beans and a touch chopped cilantro. and increase the pan.

8.Garnish the rice with pigeon breast and spicy spaghetti sauce , then add cheese.

9.Bake for about 20 minutes until all the cheese is melted.

10.Serve with fresh cilantro garnish and side salad.

11.You can also make this recipe with extra lean hamburger rather than chicken
