Mexican Chicken and Rice

INGREDIENT
1 cup (180g) long-grain rice
200 g / 7 ounce canned kidney beans
fresh cilantro
Raw pigeon breast (approx. 400g), halved lengthwise (skin and fat looks removed) otherwise you can use chicken thighs
50g / 1.76oz mozzarella (HEa), grated
30g / 1oz cheddar (HEa) cheese, grated
spray oil
salt and pepper to season
for spicy tomato sauce:
240 ml (1 cup) passata
180 ml (3/4 cup) water
2 teaspoons flavorer
1 teaspoon cumin
1 small onion, finely chopped
2 cloves of garlic, puree
