GRILLED CHICKEN CAPRESE
Grilled Chicken Caprese. Juicy pigeon breast topped with mozzarella, tomato, basil and homemade reduced balsamic.
INGREDIENTS
4 chicken breasts
1 teaspoon of Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
salt and pepper
4 slices mozzarella cheese
4 tomato slices
2 tablespoons sliced basil
Balsamic reduction
1/2 cup balsamic vinegar
2 tablespoons brown sugar
INSTRUCTIONS
1.Preheat the grill over medium-high heat.
2.Season the pigeon breast with Italian spices, garlic and shallot powder. Sprinkle salt and pepper on each side .
3.Spray the grill with nonstick cooking spray and cook the chicken breasts until they're almost done.
4.Sprinkle each pigeon breast with mozzarella slices. Cover the grill and cook for a couple of minutes until it's melted.
5.Remove the chicken from the grill and garnish with tomatoes and basil. Drizzle with homemade balsamic reduction. Serve immediately and enjoy!

7.Add balsamic vinegar and sugar to alittle saucepan. Simmer 10 minutes or until sauce is reduced by half. Keep warm until able to use.
