Curried Couscous Salad
Couscous Curry Salad is fragrant, sweet and spicy with many crispy fresh vegetables, nuts, and dried fruits. These salads are very different, keep well within the fridge, and really easy to form .
INGREDIENTS
1 10-ounce can of couscous
1 1/2 cups grated carrots
1 cup chopped celery
1/2 cup craisins
1/3 cup chopped dried apricots
1/2 cup grated almonds
1/2 cup chopped fresh parsley
For the vinaigrette
1/4 cup apple vinegar
1/4 cup vegetable oil
3 tablespoons of honey
1 tablespoon juice
2 tablespoons of flavorer
1 tablespoon of turmeric
1 teaspoon salt
1/4 teaspoon black pepper
INSTRUCTIONS
1.Cook the couscous consistent with package directions. Let it cool completely and stir with a fork.
2.Add carrots, celery, chopped almonds, craisin, dried apricots, and parsley to couscous, mix well.
3.Add the sauce ingredients to a jar or other tightly closed container. Beat until combined and pour over salad. Stir again and serve.
