Christmas carbonara
The Christmas Carbonara Pasta Recipe is one of the traditional pasta dishes prepared during the Christmas season. The spaghetti pasta is mixed with bacon stripes, chicken in a creamy sauce with Italian seasoning.
Ingredients
- 1 clove of garlic
- 80 g of cooked ham
- 400 g tagliatelle
- 6 fresh chives
- 1 tablespoon of olive oil
- 2 large free-range egg yolks
- 150 g mushrooms
- 50g Parmesan, plus extra for serving
- 3 sprigs of fresh flat-leaf parsley
- 100 g of fresh cream
Method
First, cook the tagliatelle in a large pot of salted boiling water, according to the package directions.
Then, slice the mushrooms, peel and finely chop the garlic, then put them in a pan over medium heat with the oil. Sauté for 5 minutes until softened.
Finely grate the Parmesan (if using) in a bowl, then finely chop it and add the parsley leaves and chives.
Incorporate the egg yolks and the crème fraîche and season well with black pepper.
Add the fried mushrooms, grate and add the ham, then toss to combine.
Drain the tagliatelle, keeping a cup of the cooking water, then return it to the pot.
Off the heat, pour the sauce over the pasta and toss to coat. Add cooking water to loosen it if necessary. Serve with an additional grater of Parmesan, if desired. Happy Cooking Time.
