Spinach Rice


 Spinach Rice



This spinach rice is filled with fresh taste and savory. Made with herbs, lemon and other vegetables, this delicious rice dish is healthy, mouthwatering and excellent for any meal.


INGREDIENTS

3 tbsp vegetable oil

1 medium onion, diced

4 garlic cloves, chopped

¼ cup of dill, chopped

¼ cup chopped scallion

1 lb of baby spinach

1 cup basmati rice

2 cups of vegetable stock

3 tablespoons vegetable butter (optional)

2 tbsp. dill, chopped

1 teaspoon lemon peel

2 tbsp. juice

vegan feta, for optional garnish


INSTRUCTIONS

1.Heat vegetable oil during a large saucepan over medium-high heat. Cook the onions for 5-7 minutes or until they're translucent and start to brown.

2.Add garlic, ¼ cup of dill and ¼ cup of chives. Sauté for a moment or two.

3.Add spinach and cook, 3-4 minutes, until wilted.

4.Add basmati rice and vegetable stock and stir. Check if it needs salt (my broth is well seasoned). bring back a boil, cover the pan with a lid and reduce the warmth to medium-low. Boil for 20 minutes.

5.Remove the lid and put butter on top. Cover again and let stand 5 minutes, let the butter melt and finish cooking the rice.

6.Now add 2 tbsp. anise, juice and lemon peel . Stir everything well and serve.
