Sticky Toffee Pudding


 Sticky Toffee Pudding



Easy traditional sticky caramel English pudding made with date cake with homemade caramel sauce! Yum!


INGREDIENTS

For date pudding:

8 ounces of dried dates, cored and chopped

1 cup of boiling water

1 teaspoon bicarbonate of soda

2 tablespoons butter, temperature

1 cup of packaged sugar

1 teaspoon vanilla (optional)

2 large eggs

1 tablespoon of molasses

2 tablespoons treacle (or corn syrup)

1 1/2 cups all purpose flour (gluten liberal to gluten free)

1 1/2 teaspoons leaven

1/2 teaspoon salt

For caramel sauce:

1/2 cup cream / light whipping cream

1/2 cup sugar

1/4 cup butter

1 tablespoon of molasses

2 tablespoons treacle (or corn syrup)

1 teaspoon vanilla (optional)


INSTRUCTIONS

For date pudding:

1.Soak the dates in boiling water with bicarbonate of soda for quarter-hour before mashing them during a kitchen appliance (with soaking water).

2.Combine mashed dates, butter, sugar , vanilla, egg, molasses and treacle .

3.Mix flour, leaven , leaven and salt before stirring with wet ingredients.

4.Pour batter into greased baking sheet and bake in preheated 350F / 180C oven until the toothpick inserted within the center comes out clean, about 15-20 minutes for the muffin pan, approx. 30-40 minutes for the cake pan.

5.Enjoy it still hot from the oven, sprinkle with caramel sauce!

For caramel sauce:

6.Heat everything during a saucepan over medium heat and cook until smooth and sauce slightly thickened, about 5 minutes.
