SMOTHERED BURRITO



SMOTHERED BURRITO









Filled with seasoned ground beef, rice and beans, then topped with a spicy sauce and lots of cheese, these burritos will leave you full and satisfied. The list of ingredients is long, but most of the ingredients are staple foods.

Ingredients

For the beef:

  • 3/4 teaspoon cumin
  • 1 tablespoon of chili powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon of salt
  • 1/2 teaspoon dried oregano
  • 2 pounds of ground beef
  • 1 can of 8 ounces of tomato sauce
  • 1/4 teaspoon onion powder

For the chili sauce:

  • 1 teaspoon of salt
  • 1/4 cup all-purpose flour
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of chili powder
  • 1/4 cup butter or shortening
  • 2 teaspoons of ground cumin
  • 2 cups of beef broth or water

For the Burritos:

  • 2 cups grated cheddar cheese
  • 8 burrito-size flour tortillas
  • 2 16-ounce cans of refried beans, or can use homemade refried beans

For optional garnishes:

  • Guacamole
  • Fresh tomato
  • Salad
  • Fresh cream

Instructions

First, prepare the ground beef by cooking it in a large skillet over medium heat until cooked through, more pink. Drain the fat and return to the stove over low heat.

Then, add the rest of the ingredients, tomato sauce and seasonings. Stir to combine. Cook over low heat for another 2-3 minutes then remove from heat and set aside.

Prepare the chili sauce by heating a large skillet over medium heat. Add the butter and cook until melted. Whisk in the flour and cook for about 2-3 minutes. Add seasonings and toss to combine.

Slowly pour in the broth while stirring. Cook over medium heat, stirring occasionally, until the sauce thickens, about 5 to 7 minutes.

Preheat the oven to 350 ° F.

Assemble the burritos by layering about 1/4 cup of refried beans slightly off-center in the tortilla. 
Leave at least a 1-inch border at the edge of the tortilla. Top with about 1/4 cup cooked ground beef. 
Sprinkle with cheddar cheese. Roll up the tortilla and fold the edges to form a burrito. Place in a large baking dish.

Continue until all the burritos are formed.

Pour the chili sauce on top. Sprinkle with additional cheese.

Bake uncovered for about 15 to 20 minutes until all the cheese is melted.

Remove from the oven, serve, add additional toppings if desired and enjoy! Happy Cooking Time.
