Irish Traditional Christmas Cake








We love a good fluffy Irish Christmas cake and it’s such a special dessert that the Irish make just for Christmas and we just love it!

Ingredients

  • 4 large eggs
  • 100g of shamrock cherries
  • 275 g / 10 oz Shamrock raisins
  • 100g Shamrock Mixed Peel
  • 175 g / 6 oz Light Shamrock Muscovado Sugar
  • Zest of 1 lemon
  • 100g Shamrock chopped almonds
  • 275 g / 10 oz Shamrock raisins
  • Plain flour Odlums 225 g / 8 oz
  • 175g / 6oz of butter (at room temperature)
  • 100g bag of Shamrock ground almonds
  • Peel of 1 orange
  • ½ teaspoon of Goodall's mixed spices
  • ½ teaspoon Goodall's nutmeg
  • 2 tablespoons of whiskey


Method


First, preheat the oven to 120 ° C / 250 ° F / Gas ½. Line a 20 cm / 8 "round or 18 cm / 7" deep cake pan with a double layer of parchment paper.

Then, bake the butter and sugar together in a large mixing bowl. Stir in the eggs with a few spoonfuls of flour. Sift the rest of the flour and the spices. Mix well.

Finally, stir in the raisins, raisins, cherries, mixed peel, chopped walnuts, ground almonds, lemon zest, orange zest and whiskey. Make sure the ingredients are well combined.

Transfer to the prepared tin. Level the top with the back of the spoon. Bake for about 3½ to 4 hours, but check at regular intervals after 2:30!

Once baked (a knife inserted in the cake must come out clean, without the dough), remove from the oven and let cool in a mold.

When cool, remove from tin and wrap in parchment paper and then foil. Store in a cool, dry place until you are ready to decorate. Happy Cooking Time.
