Baked Thai Sweet Chili Chicken Wings
A Thai-inspired baked chicken wing recipe that takes wings to a whole new level. Slightly spicy, dripping with homemade sweet chili sauce and cooked to perfection. A perfect aperitif for the crowd!
INGREDIENTS
- 1/2 to 1 tablespoon sea salt flakes (adjust to taste)
- 1 1/2 kg (3 pounds) chicken wings / snack foods (tip removed, drumsticks and dishes separated)
Icing:
- 1/4 cup soy sauce
- 3 tablespoons of fish sauce
- 1 tbsp minced lemongrass
- 4 tablespoons of rice wine vinegar (or white vinegar)
- 2 teaspoons of sesame oil (or peanut)
- 2 tablespoons of lime juice
- 3/4 cup Thai sweet chili sauce
- 4 tablespoons of coconut sugar or brown sugar
- 1 tablespoon minced garlic
To serve:
- A generous pinch of salt
- 2 green onions, thinly sliced for serving
- 1/4 cup chopped fresh cilantro
- Red pepper flakes
INSTRUCTIONS
First, preheat the oven to 400 ° F (200 ° C). Lightly spray large baking sheet with cooking oil spray; put aside.
Then, to prepare the frosting, combine all the frosting ingredients in a small bowl or jug; whisk until blended. Pour half the sauce into a small saucepan and set aside for later.
Trim off any excess skin around the edges of the wings. Season with salt to taste. Place the wings on the prepared baking sheet; pour sauce over wings and toss to evenly coat. Arrange the wings in a single layer and bake for 10 to 15 minutes.
While the wings are in the oven, bring the remaining frosting to a boil over low-medium heat, until the sauce is bubbling and starting to thicken (this should take about 5 minutes).
Once the chicken wings are cooked on one side, rotate each piece and cook again for another 10 minutes. Change oven settings to broil (or broil) over medium-high heat; brush the wings with half of the ready-to-use frosting and let crisp another 5 minutes. They will look golden and shiny from the glaze.
Once the wings are golden, remove them from the oven and brush again with icing. Garnish with cilantro, onion slices, chili flakes and sprinkle with salt (if necessary). Serve with all the remaining frosting for dipping! Happy Cooking Time.
