INGREDIENTS

  • 2 eggs
  • 1 cup sugar
  • 1/3 cup cocoa
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla
  • 3/4 cup all-purpose flour
  • 3 egg yolks, lightly beaten
  • 1/2 cup butter (1 stick), melted
  • 1 teaspoon vanilla
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup butter (1 stick)
  • 3/4 cup chopped pecans
  • 1 1/2 cups sweetened flaked coconut
  • 1 unbaked 9-inch pie crust
  • 1 (14 oz.) can sweetened condensed milk
  • Pinch of salt

INSTRUCTIONS

First, preheat the oven to 350 degrees.

Then, in a medium bowl, combine melted butter, sugar, vanilla and eggs until blended. Stir in flour and cocoa until smooth. Stir in chocolate chips and pecans.

Pour the mixture into the prepared pie shell and distribute evenly. Bake for 25 to 30 minutes or until center does not move and a toothpick inserted comes out clean. Cool completely.

Meanwhile, prepare the frosting by mixing the condensed milk, egg yolks and butter in a medium saucepan. Cook over medium-low heat, whisking constantly, until thick and bubbly.

Remove from the heat and stir in the vanilla, coconut, pecans and a pinch of salt. Let cool completely before spreading on the pie.

If desired, serve a pie garnished with chocolate fondant sauce and / or pecan halves for garnish. Happy Cooking Time.
