Napa Sweet Corn Salad
An unexpected ingredient adds a crunchy crunch to a classic corn salad, and the easy dressing brings it all together. Perfect for summer and fall meals!
Ingredients
- 1 red apple, chopped
- 3 small or 2 large green onions, chopped
- 1/3 cup sliced or chopped almonds
- 1 small avocado, chopped
- 1/4 cup packed fresh basil, chopped
- 2 cups sweet corn kernels, raw (~ 3 cobs)
- 1 cup cherry or grape tomatoes, halved or quartered if large
For the honey-Dijon vinaigrette:
- 1 tablespoon of honey
- 1/4 cup apple cider vinegar
- salt and pepper
- 1/2 cup extra virgin olive oil
- 1 tablespoon of Dijon mustard
Instructions
First, combine the ingredients for the honey Dijon mustard dressing in a jar or bowl, then shake or whisk to combine. Taste and then add up to 1/2 tbsp of extra honey if desired - remember that the sweet corn and apple will add a natural sweetness to the salad. Reserve the vinaigrette.
Then, combine remaining ingredients in large bowl, then pour in desired amount of Honey Dijon Mustard Dressing and stir to combine. Happy Cooking Time.
