EASY LEMON CURD RECIPE
You only need 5 simple ingredients for a homemade lemon curd - and the recipe cooks on the stove in 10 minutes! If you know how to whip, you can make this delicious spread.
INGREDIENTS
- 4 egg yolks
- 2 tsp finely grated lemon zest
- 3 tbsp (42g) salted butter
- 1/4 cup (60ml) fresh lemon juice (about 1–2 lemons)
- 1/3 cup (69g) sugar
INSTRUCTIONS
First, combine all the ingredients in a double boiler (or in a metal bowl over a pot of simmering water). Heat, whisking constantly, until the mixture thickens and reaches 160 degrees, or covers the back of a spoon.
Then, pour the lemon curd into a heatproof bowl, cover with clear wrap pressed over the top of the curd to prevent film formation and refrigerate until cold.
Serve with the desired treat. Lemon curd is best when it is well covered and eaten within 1-2 weeks. Happy Cooking Time.
