Chocolate Fudge Cupcakes







Easy, delicious and super crazy chocolate fudge cupcakes with the ultimate chocolate butter frosting!

Ingredients

  • 1 Eggs
  • 1/2 Cup Cocoa Powder
  • 1 tsp Baking Powder
  • ½  tsp Vanilla Extract
  • 1 Cup All Purpose Flour
  • ¾  tsp Baking Soda
  • 1 Cup Granulated Sugar
  • ½  Cup Buttermilk
  • ¼  Cup Vegetable Oil
  • ½  Cup Boiling Water

Instructions

First, preheat the oven to 350 degrees F and line a regular-sized cupcake pan with 12 cupcake tins

Then, in a medium bowl, combine the flour, sugar, cocoa powder, salt, baking soda and baking powder; whisk until smooth, set aside

In a small bowl, whisk together the buttermilk, oil, eggs and vanilla extract

Add the dry ingredients to the wet ingredients and whisk until the dough is smooth and all the ingredients are completely incorporated

Add boiling water to the dough and whisk slowly until well blended

Using an ice cream scoop, divide the chocolate cupcake batter into the lined cupcake pan until each is about full.

Bake at 350 degrees for 14 to 16 minutes or until the cupcakes come back to the touch

Let the cupcakes cool for 10 to 20 minutes before removing them from the pan and frosting them with the dark chocolate icing.

Using a star tip and a pastry bag, spread the fondant chocolate icing over the chocolate cupcakes

Decorate with chocolate chips or any decoration of your choice!
