CORNFLAKE COOKIES
Cornflake cookies - with kettle fries! These sweet and savory cookies without baking are a treat that you will want to make a new tradition with each holiday season!
INGREDIENTS
- 1 large egg
- 1/2 teaspoon baking soda
- 75 grams (1/2 cup) chocolate chips
- 1 teaspoon vanilla extract
- 90 grams (1/2 cup) brown sugar
- 45 grams (1 and 1/2 cups) Cornflakes
- 115 grams (1/2 cup / 1 stick) unsalted butter, room temperature
- 50 grams (1/4 cup) caster sugar or granulated sugar
- 210 grams (1 and 1/2 cups) plain flour
INSTRUCTIONS
First, line two baking sheets with parchment paper or parchment paper. Preheat the oven to 180 C (350 F) standard / 160 C (320 F) with forced ventilation.
Then, in a large mixing bowl, beat the butter and sugars with an electric mixer for 1 to 2 minutes or until they are pale and creamy.
Add vanilla and egg and beat until well blended. Sift the flour and baking soda and mix to combine.
Add the chocolate chips and stir. In another bowl, add the Cornflakes and mash them lightly with your hands.
Take dough balls (about 1.5 tablespoons each), then roll them into the Cornflakes, pressing the Cornflakes into the cookie dough with your hands.
Place cookie dough balls on your prepared trays, leaving room for the cookies to spread.
Bake for about 12-13 minutes or until golden. Transfer carefully to a wire rack to cool completely. Happy Cooking Time.
