Butter Pecan Fudge Recipe

INGREDIENTS

  • 1/8 teaspoon salt
  • 1/2 cup packed brown sugar
  • 2 cups confectioners' sugar
  • 1/2 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 cup coarsely chopped pecans, toasted
  • 1/2 cup butter, cubed, plus butter for greasing pan.
  • 1/2 cup granulated sugar

INSTRUCTIONS

First, line an 8 x 8-inch pan with aluminum foil. Grease the aluminum foil with butter.

Then, in a medium saucepan with a thick bottom, combine the butter, the two sugars, the cream and the salt.

Bring to a rapid boil over medium heat, stirring constantly. Cook, without stirring, until a candy thermometer reads at 234 ° (soft ball stage). Remove from fire. Add the vanilla to the pan (do not stir).

Cool, without stirring, to 110 °, about 30 minutes.

Beat with a spoon until the fudge begins to thicken.

Gradually stir in sugar from confectioners until smooth; add the nuts and continue to stir until the fudge becomes very thick and just begins to lose its luster. Immediately spread in the prepared pan.
