Oreo Cheesecake Cookies
Oreo cheese cookies are all I love about American baking. They're so quick and easy to make while really providing flavor and texture.
Ingredients
- 3/4 cup sugar
- 1 cup + 2 tablespoons all-purpose flour
- 8 tablespoons salted butter, at room temperature
- 4 ounces cream cheese, softened
- 10 Oreo cookies, broken into pieces
Instructions
First, in the body of a stand mixer fitted with a paddle, beat the cream cheese and butter until light and fluffy, scraping the sides if necessary.
Then, add the sugar and beat well.
Add the flour, a little at a time, beating on low speed, until incorporated. Fold the oreos until they are evenly distributed.
Cover the bowl with plastic wrap and place in the refrigerator for at least 45 minutes and up to 2 hours.
30 minutes before cooking, preheat the oven to 350 degrees (F).
Line a large baking sheet with parchment paper.
Using a cookie spoon, remove 2 scoops of dough the size of a tablespoon, roll them into rings and place them on the cookie sheet. Lightly press each cookie.
Place the pan in the oven to bake for 10 to 11 minutes, or until * just browned around the edges. They will always be very soft when you take them out of the oven - that's a good thing!
Leave to cool on the baking sheet for 10 full minutes, then transfer very carefully to a cooling rack to cool completely.
