Coconut Cream Pie Gooey Bars







These gooey coconut cream pie bars are phenomenal! They taste like a coconut cream pie but without the hassle of making a crust.

INGREDIENTS

  • 1 large egg
  • 1/2 cup powdered sugar
  • 1 teaspoon coconut extract
  • 2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 1 can 14 ounces sweetened condensed milk
  • 2 cups shredded sweetened coconut

INSTRUCTIONS

First, line a 9 x 13-inch pan with aluminum foil and spray with cooking spray. Preheat the oven to 350 ° F.

Then, place the butter, flour, salt and powdered sugar in the bowl of a stand mixer fitted with the paddle (or use a hand mixer). Mix until a smooth cookie dough is obtained.

Place the shortbread cookies in the prepared pan. Spray your hands with cooking spray and press a thin layer into the pan. Bake the shortbread layer for 15 minutes.

While cooking, mix the sweetened condensed milk, the egg and the coconut extract. Stir in the coconut. After 15 minutes of cooking, gently pour the milk mixture over the hot crust. Continue cooking for about 17 to 19 minutes until the sides start to golden brown.

Let cool completely before cutting into bars. Store in an airtight container for up to 3 days or freeze for up to a month.
