CHOCOLATE CHERRY COOKIES
These chocolate and cherry cookies are a delicious balance between mellow, mellow and chocolatey. A double thumbprint gives way to many cherries with a delicious chocolate ice cream filling ... the perfect holiday cookie!
INGREDIENTS
- 2 eggs
- 2/3 cup cocoa
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 1/4 teaspoon baking soda
- 1 1/2 cups all purpose flour
- 1/4 cup semi sweet chocolate chips
- 1 teaspoon vanilla extract
- 2 tablespoons sweetened condensed milk
- 1/2 cup butter softened
- 1/4 teaspoon baking powder
- 2 teaspoons cherry juice (from maraschino cherry jar)
- 30–36 jarred maraschino cherries
- 1 tablespoon cherry juice (from maraschino cherry jar)
INSTRUCTIONS
First, preheat the oven to 350 degrees.
Then, cream the butter and the two sugars in a blender. Add the eggs one by one and mix.
Combine flour, cocoa, salt, baking powder and baking soda in a medium bowl. Add 1/2 cup dry mixture to the butter mixture at a time. Mix after each addition until the combined side and scraping of the mixer bowl are necessary. Add the vanilla and 2 teaspoons of cherry juice and mix until well blended. Remove the bowl from the blender and refrigerate for 30 minutes
Butter your hands and roll the dough into 1 inch balls. Place on a baking sheet lined with parchment paper. Using your thumb, press a small imprint in the center of the cookie and place the maraschino cherry in the hole.
Bake for 10 minutes.
Melt the chocolate chips and sweetened condensed milk at low temperature. Once melted, add 1 tablespoon of cherry juice. Drizzle with cooled cookies. Happy Cooking Time.
