BANANA BERRY OAT BREAD
Oatmeal-free banana and blueberry bread made easily in your blender with gluten-free rolled oats and sweetened with pure maple syrup. A satisfying sweet treat to satisfy your desire for an afternoon snack.
Ingredients
- 1 egg
- 1/4 cup chia seeds
- 1 tsp baking soda
- 2 bananas mashed
- 1 tsp baking powder
- 1 1/2 cups of flour
- 1 cup rolled oats
- 1/4 cup brown sugar
- 1 cup fresh strawberries chopped
- 1/2 cup fresh blueberries
- 1/4 cup coconut oil melted
- 1/4 cup greek yogurt
- 1/4 cup milk I used flax milk in this recipe
Instructions
First, preheat your oven to 350
Then, grease a 9-inch loaf pan (I use a coconut oil spray)
Mix the first 4 ingredients together in a large bowl, set aside.
In a medium bowl, combine the oil, bananas, sugar, egg, Greek yogurt and milk.
Add the wet ingredients to dry and mix until they are combined.
Fold the berries and chia seeds.
Pour the dough into the bread pan and bake for 50 to 60 minutes
