GLUTEN FREE IRISH SODA BREAD









This gluten-free Irish soda bread is the perfect accompaniment for your. It is so quick to prepare and it is best to eat it hot, covered with salted Irish.

Ingredients

  • ¾ teaspoon salt
  • 1 large egg
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 ½ cups buttermilk
  • 4 tablespoons melted butter, divided
  • 3 cups gluten-free all-purpose flour, plus more for dusting

Instructions

First, preheat the oven to 400 degrees F.

Then, whisk the buttermilk, egg and 3 tablespoons of melted butter in a medium bowl.

Place the flour, baking powder, baking soda and salt in a stand mixer fitted with a paddle. Mix at low speed to combine. Increase the speed to medium and slowly add the buttermilk mixture until a soft paste forms. Let the dough rest for 10 minutes.

Brush the rest with 1 tablespoon butter on the base and halfway down the sides of an 8 inch cast iron skillet. Sprinkle the hands with flour and form the dough into a ball. Press the dough into the prepared pan. Use a sharp knife to mark a deep "X" at the top of the dough.

Bake in the oven until lightly browned and ring hollow when tapped on the bottom, 30 to 40 minutes. Remove from the pan and let cool on a rack for at least 30 minutes. Happy Cooking Time.
