THAI NOODLE SALAD







THAI NOODLE SALAD 






This Thai noodle salad has GREAT flavors - peanut, lime, soy, chili, coriander. Topped with a homemade peanut vinaigrette! Healthy and fresh.

Ingredients
  • 2 tbsp soy sauce
  • 1 tsp lime juice
  • 3 tbsp peanuts toasted
  • 2-3 tbsp coriander leaves
  • 2 tbsp red wine vinegar
  • 1 tbsp ginger and garlic chopped fine
  • 1 tsp Red chilli flakes
  • 3 Tbsp Peanut butter smooth
  • 2 tbsp sriracha sauce or Red chilli sauce
  • 200 g noodles wholewheat or regular

Instructions

First, boil the noodles in salted water according to the directions on the package.

Then, drain and spread on a large plate, set aside to cool.

Now, in a small bowl, whisk together the peanut butter, vinegar, soy sauce, 
Sriracha or chili sauce, lime juice, chili flakes and set aside. Use hot water to adjust the consistency.

Now skip the pepper strips with the Thai basil and set aside.

In a large mixing bowl, place the noodles and stack the vegetables on top of the noodles.

Pour the peanut sauce over everything, cover with chopped cilantro, grilled peanuts and mix everything.

Serve in individual portions and add crushed peanuts, cilantro / cilantro or chili flakes.

Eat hot or cold. Happy Cooking Time.
