Steel Cut Almond Energy Bites







The energetic bites of steel cut Almond are a healthy and easy to prepare ingredient. Satisfy this hunger at the end of the afternoon with these simple and delicious energetic bites without cooking

INGREDIENTS
  • 1/2 cup (40 g) quick oats
  • 1/2 cup (15 g) crispy rice cereal
  • 6 tbsp (120 g) brown rice syrup**
  • 1/2 cup (128 g) almond butter*
  • 1/4 cup (28 g) coconut flour
  • 1/4 cup (40 g) chocolate chips, for melting
  • 1 cup (80 g) oats, ground into a flour***
  • 1 – 2 tbsp (15 – 30 ml) unsweetened almond milk, if needed

INSTRUCTIONS

First, add the almond butter and brown rice syrup to a small bowl and stir until well combined. Put aside.

Then, combine oatmeal, coconut flour, quick oats and crispy rice cereals in a large mixing bowl, stirring until well blended. Pour the wet ingredients into the dry ingredients and mix until completely incorporated. The mixture may seem a bit dry and difficult to work at first, but continue to mix until the ingredients begin to incorporate, adding 1-2 tablespoons (15-30 ml) of almond milk to soften it, if necessary.

Using a full tablespoon, roll the dough between your hands to form individual balls. Set them aside on a large baking sheet lined with parchment paper and repeat with the remaining dough.

To prepare the chocolate fillet, melt the chocolate chips in the microwave or over a double broiler, stirring periodically to make sure that no lumps remain. Use a spoon to drizzle the chocolate on each ball and sprinkle with the desired garnish.

Refrigerate for about 15 minutes or until the chocolate is set. Store bites in an airtight container in the refrigerator for up to 2 weeks.

NOTES

* You can use any nut butter you have on hand, or use soy nut butter to make them nut-free. 
** You can use honey if you don't need it to be vegan.
*** To make your own oatmeal, add the oats to a high speed blender or food process and process at high temperature until the oats look like fine flour.
