MISSISSIPPI MUD BROWNIES






My favorite brownie recipe in a bowl, topped with hot, sticky marshmallows and chocolate frosting.

INGREDIENTS

Brownies:
  • 4 eggs
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) butter
  • 1 Tablespoon vanilla extract
  • 2 cups granulated sugar
  • 4 ounces unsweetened chocolate (like Bakers)
  • 1 cup all-purpose flour
Chocolate Ganache-Marshmallow Topping:
  • 1 1/2 Tablespoon butter
  • 3 cups mini marshmallows
  • 2 cups (12 ounces) semisweet chocolate chips
  • 3/4 cup heavy whipping cream


INSTRUCTIONS

preheat the oven to 350 degrees and grease a 9x13 baking dish.

First, for brownies:

In a large glass bowl, combine the unsweetened chocolate and butter. Heat in the microwave 1-2 minutes, stirring intermittently until it is melted and smooth.

Stir in eggs, sugar, vanilla and salt until well blended.

Stir in the flour and mix well.

Spread evenly in the prepared pan. Cook 25-30 minutes. Do not overcook! 
Brownies should be moist. Let cool in the pan.

Then, for the filling:

Mix the chocolate chips and the cream in a large glass bowl. Heat in the microwave 1-2 minutes, stirring twice until it is melted and smooth. Add the butter and stir until it is melted and smooth. Fold the marshmallows.

Spread the filling evenly over the top of the cooled brownies. Refrigerate for several hours or overnight. Cut into bars. Keep refrigerated. Happy Cooking Time.
