Lemon Greek Yogurt Waffles






Lemon Greek Yogurt Waffles





Soft on the inside, crisp on the outside, these blueberry Greek yogurt waffles are packed with protein and whole grains.

INGREDIENTS
  • 2 large eggs
  • 1/4 tsp salt
  • 1/2 tsp cardamom
  • zest of one large lemon
  • 1 1/2 cups milk of choice + 2 TBS lemon juice
  • 2 1/4 cups whole wheat pastry flour (or all purpose gluten-free 1:1)
  • 1 TBS baking powder
  • 5.3oz Lemon Greek Yogurt (or 1/2 cup + 1 TBS Greek yogurt)

INSTRUCTIONS

First, prepare the waffle iron by preheating and greasing it well (the spray works better).

Then, in a glass measuring cup, mix the milk with the lemon juice, set aside.

In a medium bowl, add the dry ingredients, flour through the lemon zest, whisk until smooth.

In a large bowl, add the eggs, Greek yogurt and milk + lemon juice. Stir gently to combine, then gently add the dry ingredients. Stir with a large spatula or spoon until everything is well combined.

Pour 1/2 cup of batter into the preheated, greased waffle iron and let the waffle cook completely until lightly browned. Mine took about 5 minutes, but each waffle maker is different, so be sure to follow the instructions from your waffle maker.

Carefully remove and transfer to a hot oven before serving. Enjoy your favorite toppings! Happy Cooking Time.
