Glazed Strawberry Bread
This
strawberry iced bread is the perfect way to use fresh summer strawberries! It
gathers quickly and is full of a delicious strawberry flavor. Make sure you are
a family favorite!
Ingredients
For the
Bread:
- 1 large egg
- 1/2 cup milk
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup oil
- 2 cups diced strawberries
- 2 teaspoons baking powder
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract or almond extract
- 2 tablespoons all-purpose flour
For the
Glaze:
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract or almond extract
- 1/3 cup finely diced strawberries
- 2 cups powdered sugar
- 1-2 tablespoons heavy cream or milk
Instructions
First, preheat
the oven to 350 degrees.
Then, in a
medium bowl, combine the sugar, milk, oil, egg and vanilla. In another bowl,
combine the flour, baking powder and salt. Add the dry ingredients to the wet
ingredients and stir until just combined.
In a small
bowl, combine the strawberries and 2 tablespoons of flour to coat the
strawberries. Gently fold the floured strawberries into the dough.
Pour the
bread dough into a greased 9 "x5" loaf pan. Bake at 350 degrees for
50-55 minutes. A toothpick inserted in the center of the bread should come out
clean. Let the bread cool for 10 minutes, then remove it on a wire rack to cool
completely.
To make the
icing, mix the powdered sugar, the melted butter, the diced strawberries and
extract in a small bowl. Mix until it is smooth.
Once the
bread has cooled, spread the frosting over the bread. Slice and serve. Happy
