Creamy Tuscan Shrimp
Need a super
simple and quick quality dinner for a busy day serving your guests? You can
have this easy creamy Tuscan shrimp in a creamy wine sauce on the table in
under 30 minutes and it's packed with my favorite Italian flavors!
Ingredients
- 1 teaspoon flour
- 1/2 teaspoon lemon juice
- 2 tablespoons butter
- 1 cup heavy/whipping cream
- 2 dashes Italian seasoning
- 4-5 cloves garlic minced
- 1 cup (packed) fresh baby spinach
- 1/4 cup sun-dried tomatoes chopped or julienned
- 1 pound shrimp (I used 31-40 count size) thawed & peeled
- Handful fresh basil cut into thin strips
- Salt & pepper to taste
Instructions
First, melt
the butter over medium-high heat in a large skillet. Add the flour and cook for
about a minute, stirring until smooth.
Then, add
the garlic and cook for about 30 seconds or until it is fragrant.
Stir in
cream, lemon juice, Italian seasoning and sun-dried tomatoes.
Simmer for 2
minutes. Reduce the heat if it boils too much.
Add the
shrimp and cook for about 5 minutes or until they are cooked through and the
sauce is slightly thickened, taking care not to overcook them.
Add spinach
and basil and cook for another 2 minutes. Season with salt and pepper as
needed. Serve immediately. I like to squeeze the extra lemon juice on top when
serving (yours). You can also grate fresh parmesan over it if you wish. Happy
