STRAWBERRY RHUBARB CHIA PUDDING






Only 4 ingredients for this fruit chia pudding prepared with coconut milk and a rhubarb strawberry compote. Super easy to prepare, it's a perfect breakfast, snack or even nutritious vegan dessert.

INGREDIENTS

Chia pudding
  • 1 tsp vanilla extract
  • 1 cup light coconut milk
  • 1/4 cup chia seeds
  • 1 tbsp maple syrup

Strawberry rhubarb compote
  • 1 tbsp maple syrup
  • 1 cup strawberries, cut into quarters
  • 1 cup rhubarb, chopped into small pieces

INSTRUCTIONS

First, whisk the chia seeds, coconut milk, maple syrup and vanilla extract in a bowl. Reserve to leave the gel.

Then, add the rhubarb, strawberries and maple syrup to a small saucepan over medium heat.

Cook for 10 minutes, stirring every two minutes, until the fruit is broken.

Put on medium-high heat, stirring and boiling for 1 to 2 minutes.

Remove from heat and let cool.

Scoop a little chia pudding into a cup and garnish with the strawberry rhubarb compote. Happy Cooking Time.
