PECAN PIE OVERNIGHT OATS





These healthy rolled oats have the same taste as the vegan pecan pie! It's a 10 minute gluten-free breakfast to prepare with just 9 dessert flavored ingredients!

INGREDIENTS:
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons maple syrup
  • 1 cup pecans, chopped
  • Pinch of nutmeg

FOR THE OVERNIGHT OATS
  • 2 cups milk*
  • 1 teaspoon vanilla extract
  • 2 cups old fashioned oats

Instructions

First, in a medium skillet, combine the pecans, maple syrup, brown sugar, cinnamon, vanilla and nutmeg until toasted and well mixed, about 3 to 4 minutes; put aside.

Then, combine oats, milk and vanilla in a large bowl. Refrigerate, covered, for at least 5 hours or overnight.

Serve the oats, garnished with a mixture of pecans.
