No Bake Strawberry Cheesecake
This easy,
no-bake strawberry cheesecake recipe is full of strawberry flavor! Made with
gelatin and cooked strawberries, it has a thick, creamy texture that makes it a
completely irresistible cheesecake. The perfect strawberry dessert for spring
and summer.
Ingredients
Crust:
- 2 tbsp Sugar
- 5 tbsp melted Butter
- 30 Graham Crackers
Filling:
- 2 tbsp Sugar
- 1 lb Strawberries
- 16 oz softened Cream Cheese
- 16 ounce Heavy Whipping Cream
Garnish:
- 5 Strawberries sliced
- Additional Whipped Topping
Instructions
First, crush
the Graham crackers if the food processor.
Then, add
the melted butter and sugar and mix to incorporate.
Press the
mixture at the bottom and partially on the sides of a springform pan.
Refrigerate
at least 30 minutes to firm.
In a large
bowl, beat the cream cheese and sugar until creamy.
Whip the
heavy cream until stiff peaks form.
Stir in the
cream cheese mixture into the whipped cream.
Mash the
strawberries in a food processor.
Add the
strawberry puree to the mixture until smooth.
Distribute
evenly in the crust.
Freeze 2
hours.
Let thaw 30
minutes before serving.
Garnish with
sliced strawberries and additional whipped topping if desired.
