Cranberry Pistachio Fudge
A super easy
5-ingredient recipe for white chocolate, cranberry and pistachio fondant.
Ingredients
- 1/3 cup chopped pistachios
- 1/4 cup heavy whipping cream
- 1/2 cup dried cranberries Craisins
- 12 oz white chocolate chips
- 1 tbsp maple syrup OR honey or 1 tsp vanilla extract clear is best!
Instructions
First, line
a bread pan (any size) with aluminum foil. Be sure to leave the aluminum foil
hanging on both sides of the pan for easy removal. If you use a non-stick sheet
- you're done. Otherwise, lightly spray the aluminum foil with cooking spray.
Then, combine
white fries, thick whipping cream and maple syrup or honey or vanilla extract
in a medium microwave safe bowl.
Microwave
for 30 seconds on high heat. Stir. Repeat until the chips are melted and
smooth.
Add the
cranberries and dried pistachios and distribute the mixture evenly in the
prepared pan.
Let cool for
an hour or more on the counter or refrigerate for 20-30 minutes until the fudge
is completely set.
Remove the
fondant from the pan using the aluminum foil as handles. Cut the fudge into
squares and serve.
Keep
leftovers in an airtight container for up to 1 week.
