Chocolate Crinkle Cookies
Crispy on
the outside and soft on the inside, these crumpled chocolate cookies are like
brownies in the form of cookies.
INGREDIENTS
- 4 large eggs
- 2 cups white sugar
- 1/2 teaspoon salt
- 3/4 cup powdered sugar
- 1/2 cup vegetable oil
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
INSTRUCTIONS
First, in a
medium bowl, combine the cocoa, white sugar and vegetable oil. Add the eggs one
by one and add the vanilla. Whisk together the flour, baking powder and salt;
add to cocoa mixture. The mixture will be moist, a little sticky (that's why we
are cooling) and the consistency of the brownie dough. Refrigerate for at least
3 hours.
Then, preheat
the oven to 350 degrees F. Line the cookie sheets with parchment paper. Roll
the dough into 1.5 inch balls (size 40 spoon). Roll the cookies well into the
powdered sugar.
Bake in the
preheated oven for 8 to 12 minutes. It will depend on your oven and how you
like your cookies. If you like a fuzzy environment, you will be around 8
minutes (they will look wet but will settle down while cooling). If you like a
crisper edge, you will cook them for about 12 minutes. Let the cookies cool on
the cookie sheet for a few minutes before transferring them to racks to cool
