CARAMEL APPLE COOKIES
Soft cookies
in the shape of a cake with a delicious addition of sweet apples and a hard
finish of rich caramel frosting.
Ingredients
- 2 large eggs
- 1 teaspoon vanilla
- ½ teaspoon salt
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 (14 ounce) bag wrapped caramels
- 2 and ½ cups all-purpose flour
- 1 cup (2 sticks) butter, softened
- 1-1/2 cups chopped apple (about 1 large)
Instructions
First, preheat
to 350 ° F. Line baking sheets with parchment paper and set aside.
Then, remove
each caramel from the packaging and cut them into thirds.
In the bowl
of an electric mixer, combine the butter and sugars until light and fluffy. Add
eggs and vanilla and beat until well blended. Add the flour, baking soda,
cinnamon and salt and mix until well blended. Stir in sliced caramel then
chopped apples. Refrigerate the dough for at least 30 minutes.
Pour the
chilled dough a few inches apart over the prepared baking sheets.
Bake for 12
to 14 minutes or until the cookies start to brown slightly and crunch around
the edges.
Let cool on
cookie sheets for 10 minutes before transferring to a wire rack to cool
