Broccoli Cheddar Muffins







Broccoli Cheddar Muffins






Broccoli and cheese snacks, perfect for a brunch, a child-friendly lunch or a party!

Ingredients
  • 1/2 tsp. salt
  • 1 1/2 tbs. sugar
  • 1 c. milk
  • 1 egg
  • 3 c. grated cheddar cheese
  • 1 tbs. baking powder
  • 1/2 stick of melted unsalted butter
  • 1 1/2 C. flour
  • 1/2 c. grated or blended broccoli florets raw

Instructions

First, preheat the oven to 375F

Then, in a bowl, mix the first 6 increments until they are well combined (flour, baking powder, sugar, broccoli and cheese)

In another bowl, combine the milk, egg and melted butter

Mix the flour mixture and the milk mixture until they are well combined (do not mix too much!)

Grease the muffin tins or use them to easily clean the silicone tins

Fill the tin or the linings with 3/4 of the way (enough to let rise)

Bake at 375F for 20-25 minutes, or until a toothpick comes out clean.
