VEGGIE EGG MUFFINS







Start your day off right with healthy egg muffin tins! Only 50 calories per muffin, LOADED with vegetables, and can be made ahead of time!

Ingredients
  • 12 large eggs
  • 1/4 cup milk
  • 3 tablespoons minced onion
  • 1 cup cheddar cheese
  • 1 teaspoon oil
  • 1/4 cup parmesan cheese
  • 1/2 teaspoon black pepper & salt to taste
  • 3 cups mixed vegetables broccoli, mushrooms, peppers, spinach etc
  • 1/2 teaspoon dry mustard powder

Instructions

First, preheat the oven to 350 ° F.

Then, chop the vegetables and cook in 1 teaspoon of oil until the tender crunch or excess liquid is removed. Cool.

Spray a muffin pan with cooking spray very well.

Divide the vegetables, onion and cheeses into 12 wells.

In a large bowl, combine eggs, milk and seasonings. Mix well.

Pour the eggs evenly over each well. Bake 22-25 minutes or until set.

Remove cups and serve hot or allow to cool completely and refrigerate / freeze. Happy Cooking Time.
