VEGAN GNOCCHI







These creamy vegan gnocchi are an explosion of flavor with fresh basil, marinated tomatoes and garlic. Ready in just 20 minutes!

Ingredients

For the gnocchi:
  • 4 handful fresh spinach
  • 2 tomatoes, diced
  • 1 17.6 OZ (500 g) package store-bought gnocchi make sure to choose a vegan brand

For the sauce:
  • 1/2 teaspoon salt
  • 2 large cloves of garlic
  • 1 teaspoon tapioca starch
  • 2 teaspoons white miso paste
  • 3 tablespoons nutritional yeast
  • black pepper
  • 1/2 teaspoon Dijon mustard
  • 1/2 cup cashews (unsalted and not roasted)
  • 1 cup unsweetened almond milk

Instructions

First, prepare the gnocchi according to the instructions on the packaging. Place the spinach in a colander and drain the gnocchi over it (it's an easy trick to wilt the fresh spinach).

Then, make the sauce: place all the ingredients in a blender on high speed and mix until smooth.

Pour the sauce into a large saucepan and heat until thickened. Add the gnocchi, spinach and diced tomatoes. Cook for another minute.
