TUNA AND POTATO CAKES
Crispy on
the outside and smooth on the inside, these tuna patties are the ideal way to
use basic foods for a quick, easy and delicious lunch!
INGREDIENTS
- 2 Spring Onion (finely chopped)
- Bread Crumbs (super fine)
- Juice of one lime
- Small handful of chopped Coriander (cilantro)
- Oil for coating / frying
- 500 g Potatoes (peeled and cut into chunks)
- 2 x 160g (120g drained) Tinned Tuna chunks in water
INSTRUCTIONS
First, cook
the potatoes until tender, drain and mash.
Then, add
the tuna, spring onion, lime juice, cilantro and stir until well blended.
Form the
cakes with your hands (I made about 16 cakes)
Roll in
breadcrumbs until coated.
Heat a
non-stick pan and lightly spray with oil, fry on both sides until golden.
Alternatively,
spray the fish patties with oil and bake in a preheated oven (200c / 400F) for
20-25 minutes or until golden. Turn halfway through cooking and spray the other
side of the fish patties before returning to the oven. Happy Cooking Time.
